**Ingredients:**

– 500 grams of chicken boneless cubes
– 3 tablespoons of vinegar
– 1 and 1/2 tablespoons of ginger garlic paste
– 1 tablespoon of green chilli paste
– Salt to taste
– 1 teaspoon of cumin seeds, roasted and crushed
– 1 teaspoon of coriander powder
– 1/2 teaspoon of black pepper powder
– 2 tablespoons of dried milk powder
– 1 and 1/2 tablespoons of all-purpose flour
– 1 teaspoon of white pepper powder
– 1/4 cup of cream
– Charcoal for smoke
– Cooking oil for frying
– 2 tablespoons of butter
– 1 and 1/2 tablespoons of garlic, chopped
– 1 teaspoon of red chilli, crushed
– 1 cup of milk
– 1/2 cup of cream
– 1/2 cup of cheddar cheese, grated
– 1 tablespoon of fresh coriander, chopped
– 4 parathas
– 1 onion, sliced

**Directions:**

1. In a bowl, add chicken cubes and vinegar and mix well. Cover and marinate for 15 minutes.
2. Strain and pat dry the chicken. Transfer to another bowl.
3. Add ginger garlic paste, green chilli paste, salt, cumin seeds, coriander powder, black pepper powder, dried milk powder, all-purpose flour, white pepper powder and cream and mix well for 4 to 5 minutes. Cover and marinate for 1 hour.
4. Give coal smoke to the chicken for 2 minutes.
5. Thread the chicken cubes on wooden skewers.
6. On a griddle, add cooking oil and fry the chicken skewers on medium low flame from all sides until golden brown. Cover and turn sides in between (about 10 to 12 minutes).
7. To prepare the creamy white sauce, melt butter in a saucepan. Add garlic and mix well.
8. Add all-purpose flour and mix well for 1 minute.
9. Add red chilli, black pepper, salt and mix well.
10. Add milk and whisk well. Bring it to a boil and cook for 1 to 2 minutes while whisking continuously.
11. Add cream and whisk well.
12. Add cheddar cheese and fresh coriander and whisk continuously until the sauce reaches the desired consistency. Let it cool slightly.
13. To assemble the shawarma, spread some creamy white sauce on a paratha. Add some chicken malai boti, onion slices and more sauce. Fold to make a roll and wrap in butter paper.
